- 4 tbsp mascarpone cheese
- 2 tbsp heavy cream
- Pinch of vanilla powder
Instructions
- Combine mascarpone, heavy cream, and vanilla powder in a small bowl. Whip until soft peaks form. Refrigerate.
- Puree persimmon with spices until smooth.
- Grind coffee beans to medium-fine consistency.
- Heat filtered water to 200°F.
- Place filter in pour over dripper and rinse with hot water.

- Pour 50ml water for blooming, wait 30 seconds.
