Ingredients
- 17g medium-dark roast coffee beans
- 240ml filtered water at 85°C
- 2 tablespoons honey-fermented berry mixture
- 1/2 vanilla bean, split lengthwise
- For the honey-fermented berries:
- 1 cup mixed berries (strawberries, raspberries, blackberries)
- 1/2 cup raw honey
Instructions
- **Prepare honey-fermented berries** (3 days ahead): Mix berries with raw honey in a clean jar. Let ferment at room temperature for 3-5 days.

- **Heat water** to 85°C (185°F)
