Mocha Mousse Cups

Ingredients
- 200g dark chocolate, chopped
- 1/2 cup strong brewed espresso, cooled
- 2 tablespoons unsweetened cocoa powder
- 2 cups heavy cream, divided
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- Chocolate shavings for garnish
Instructions
- Melt 100g of chocolate in a double boiler. Brush the inside of 6 silicone muffin cups with the melted chocolate. Refrigerate until set, then add another layer. Repeat until cups are thick enough. Chill until firm.
- Combine espresso and cocoa powder in a small bowl, stirring until smooth.
- Melt the remaining chocolate and let it cool slightly.
- Whip 1 cup of cream until soft peaks form. Fold in the melted chocolate and espresso mixture.
- In a separate bowl, whip the remaining cream with powdered sugar and vanilla until stiff peaks form.
- Carefully remove the chocolate cups from the molds.
- Fill the chocolate cups with the mocha mousse, top with whipped cream, and garnish with chocolate shavings.
- Refrigerate for at least 2 hours before serving.
