Ingredients
- 30g medium-light roast coffee beans
- 500ml filtered water at 200°F
- 8 fresh blackberries
- 4 fresh sage leaves
- 240ml heavy cream
- 1 vanilla bean, split and scraped
- 2 tablespoons simple syrup
- Ice cubes
Instructions
- Split vanilla bean and scrape seeds. Mix with heavy cream and refrigerate for at least 1 hour.
- Grind coffee beans to medium-fine consistency.
- Heat filtered water to 200°F (93°C).
- Muddle blackberries and sage leaves in serving glasses.
- Place filter in pour-over dripper and rinse with hot water.
- Add ground coffee and begin pour-over process with 60ml water for blooming.
- Continue pouring water in circular motions until reaching 500ml.
- Fill glasses with ice and strain coffee over ice.
- Add simple syrup to taste and stir.
