  • Coffee grinder
  • Kettle
  • Whisk or hand mixer
  • Small bowl
  • Measuring spoons
  • Coffee scale (optional)

Ingredients

  • 17g medium-dark roast coffee, finely ground
  • 1 very ripe persimmon, pureed
  • 1/4 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • 200ml hot water (195°F)
  • 60ml heavy cream
  • 1 tbsp pure maple syrup
  • Pinch of salt

Instructions

  1. Puree the ripe persimmon until smooth. Mix in cinnamon and nutmeg.
  2. Set up your AeroPress in the inverted position with a paper filter.
  3. Add ground coffee to the AeroPress.
  4. Pour hot water over the grounds and stir gently.
  5. Let steep for 1 minute.
  6. While coffee steeps, whip heavy cream with maple syrup until soft peaks form.
  7. Attach filter cap and flip AeroPress onto your cup, then press gently.
  8. Stir 2-3 tablespoons of persimmon puree into the coffee.
  9. Top with maple whipped cream and a light dusting of cinnamon.

Pro Tips

  • Use very ripe, soft Fuyu or Hachiya persimmons for the best flavor
  • Pre-warm your cup and AeroPress for optimal brewing temperature
  • Whip the maple cream until just barely stiff - overwhipping will make it grainy
  • Store any leftover persimmon puree in the fridge for up to 3 days
