Ingredients
- 15g light roast coffee beans, ground medium-fine
- 1 ripe Fuyu persimmon, pureed
- 1/4 tsp ground cinnamon
- 1/8 tsp ground nutmeg
- 1/8 tsp ground ginger
- 200ml hot water (195°F)
- 60ml heavy cream
- 1/4 tsp fresh grated ginger
- 1 tsp powdered sugar
Instructions
- Puree the persimmon until smooth and mix with ground spices
- Set up your AeroPress in the inverted position with a paper filter
- Add ground coffee to the AeroPress
- Pour 50ml hot water to bloom for 30 seconds
- Add remaining water and stir gently
- After 1:30 total brew time, flip and press into your cup
- Whip heavy cream with fresh ginger and powdered sugar until soft peaks form
- Top coffee with persimmon-spice mixture and ginger cream
