Ingredients
- 17g medium-dark roast coffee beans
- 2 dried figs, chopped
- 1-inch piece fresh ginger, peeled and sliced
- 2 tablespoons mascarpone cheese
- 1 tablespoon honey
- 240ml hot water (200°F/93°C)
- Pinch of salt
Instructions
- Make the fig-ginger syrup: Simmer chopped figs, ginger, and honey with 60ml water for 5 minutes. Strain and set aside.
- Grind coffee beans to a medium-fine consistency
- Set up your AeroPress in the standard position with a paper filter
- Add ground coffee to the AeroPress
- Pour 30ml hot water to bloom the coffee for 30 seconds
- Add remaining hot water and stir gently
- After 1 minute, press the AeroPress slowly
- Add 2 tablespoons of the fig-ginger syrup to the coffee
- Mix mascarpone with a pinch of salt until smooth
- Top the coffee with a generous swirl of mascarpone
