Ingredients

  • 17g medium-dark roast coffee beans
  • 2 dried figs, chopped
  • 1-inch piece fresh ginger, peeled and sliced
  • 2 tablespoons mascarpone cheese
  • 1 tablespoon honey
  • 240ml hot water (200°F/93°C)
  • Pinch of salt

Instructions

  1. Make the fig-ginger syrup: Simmer chopped figs, ginger, and honey with 60ml water for 5 minutes. Strain and set aside.
  2. Grind coffee beans to a medium-fine consistency
  3. Set up your AeroPress in the standard position with a paper filter
  4. Add ground coffee to the AeroPress
  5. Pour 30ml hot water to bloom the coffee for 30 seconds
