- Coffee filter

Ingredients
- 30g light roast coffee beans
- 300ml filtered water at 200°F
- 60ml coconut cream
- 1 fresh lime, juiced
- 2 stalks lemongrass
- 60ml aquafaba
- 1 tbsp simple syrup
- Ice cubes
Instructions
- Grind coffee beans to medium-fine consistency
- Place filter in pour-over dripper and rinse with hot water
- Add ground coffee and bloom with 60ml hot water for 30 seconds
- Continue pouring water in circular motions until you reach 300ml
- In a small pot, simmer bruised lemongrass in 100ml water for 5 minutes, strain and cool
- Whip aquafaba with 2 tbsp cooled lemongrass water until foamy
- In a tall glass, combine coffee with coconut cream and lime juice
- Add ice cubes and stir well
- Top with lemongrass foam and garnish with a lime wheel
