- 4 tablespoons unsalted butter
- 4 fresh sage leaves
- 30g medium-dark roast coffee beans, finely ground
- 2 cups water
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- Pinch of ground allspice
Instructions
- In a small saucepan, melt butter over medium heat. Add sage leaves and cook until butter turns golden brown and smells nutty, about 3-4 minutes. Remove sage leaves and set aside.
- Grind coffee beans to a fine consistency, suitable for Moka pot brewing.
- Fill the bottom chamber of your Moka pot with hot water up to the valve.
- Add ground coffee to the filter basket, leveling it without tamping.
- Add spices to the ground coffee and gently stir to combine.
- Assemble the Moka pot and place over medium heat.
- Once coffee begins flowing, reduce heat to low.
- Remove from heat when brewing is complete.
- Divide coffee between two cups and add 1-2 tablespoons of brown butter to each.
- Garnish with reserved crispy sage leaves if desired.
Pro Tips
- Brown the butter slowly over medium heat for the best nutty flavor
- Use fresh sage leaves - dried won't give the same aromatic result
- Grind your coffee just before brewing for the freshest taste
- Store any leftover brown butter in an airtight container in the fridge
