Ingredients
- 20g medium-dark roast coffee beans
- 300ml filtered water at 200Β°F
- 2 tablespoons persimmon syrup
- ΒΌ teaspoon orange blossom water
- **For the persimmon syrup:**
- 1 very ripe Fuyu persimmon, peeled and diced
- Β½ cup water
- ΒΌ teaspoon ground cinnamon
- β teaspoon ground cardamom
- Pinch of ground nutmeg
Instructions
- **Make the persimmon syrup:**
- 1. Combine diced persimmon, water, and spices in a small saucepan
- 2. Simmer for 10 minutes until persimmon is very soft
- 3. Blend until smooth and strain through a fine-mesh sieve
- **For the coffee:**
- 1. Grind coffee beans to medium-fine consistency
- 2. Place filter in pour over dripper and rinse with hot water
- 3. Add ground coffee and create a small well in the center
- 4. Pour 50ml hot water for blooming, wait 30 seconds
- 5. Gradually pour remaining water in circular motions
- 6. Add persimmon syrup and orange blossom water to the brewed coffee
- 7. Stir gently and serve hot
